4 Breasts Chicken (cooked + shredded)
1/3 Cup Cream Cheese
1 tsp. chili powder
1 tsp. cilantro (I use dried, if using fresh you'll probably need more)
1/2 tsp cumin
1 tsp 6 Pepper Blend (optional, but add a little spice)
1 cup + cheese (cheddar, Monterey Jack, whatever you like)
1/3 cup salsa (red, green, fruit, doesn't matter)
Corn Tortillas (you'll need about 30)
Cook up the chicken beforehand. I use breasts, but you can use tenderloins. Also you're going to be cooking up a bunch of these, so test out the recipe and figure out how much of the recipe you need to cook up. You can store the cream cheese mix either + or - chicken in the fridge for a while.
Preheat the oven to 425 degrees.
Heat up the cream cheese for about 30 seconds.
Mix the spices, cream cheese, cheese, and salsa up together. I tend to use more than a cup of cheddar cheese.
After you've mixed them all up mix in the shredded chicken.
Heat up the corn tortillas going a few at a time. 30 seconds or so. They're going to be hot so let them cool a bit before handling them. Spread the mix inside the tortilla and fold it up, then place it edge side down in a greased pan.
Cook for at least 20 minutes until the tortillas are crispy at the edges.
I like to eat them with salsa, but my sister likes hers with just taco sauce. You can do whatever you want with them!
