We made chili tonight.

Not like, the white bean chili that we've been making, but red bean chili. The white bean chicken chili upset Mom's stomach last time so we've ix-nayed that recipe and gone back to basics. Which actually disappointed me because Dad's chili was always so bland. High in tomato, very dark, and just generally eh.

But tonight's chili was GOOD. Like, delicious. That might have to do with me cooking it. And overloading it with spices. Like srsly. I also tossed in a handful of fresh basil along with the 1/4 cup dry basil Dad told me to add. And I used Chinese five spice.

1.5 pounds of beef
½ large onion (chopped)
2-3 peppers (chopped) (use different colors for variation!)
1 jalapeno
2 cans of tomato puree
Large can dark red kidney beans
Small can light red kidney beans
3 tbs cumin
3 tbs chili powder
2 tsps Chinese five spice
2 tsps six pepper blend
¼ cup dried basil
Fresh basil leaves

Brown the beef in fry pan

Brown the onion and peppers in pot

Add spices to beef (more can be added to the chili later to taste)

Add beef and jalepeno to onion and pepper mixture

Add puree

Add basil

Cook?

We tend to cut the jalepeno in big chunks so that people can pick them out. I like jalepeno.

I'm totally going to make myself a chili omellette tomorrow morning and feel like Ollie. :D
