I have to cook dinner tonight. Now I feel like I shouldn't put the spinach and corn out to thaw so I can make enchiladas.

So. Tonight was... veggie enchiladas!

Or, not really. Because when I cook I tend to forget things. Not always VITAL Things, but generally the ingredient that I've been going 'don't forget' or 'I need' since before I started cooking.

I forgot the beans. XD

But I figured we would heat up the left over chicken that was in the fridge anyway, so we tossed that and the beans and some salsa together and it really improved the taste of the enchiladas. (Which were, um... Eh. Not bad but...)
